Or not so little as the case may be. Terence and I have really been working hard to reduce our food budget. So when I saw that Albertsons had whole fryer chickens on sale for 99 cents a pound I thought that was a pretty good deal. I bought three of them put two in my freezer and left one in the fridge. Then I realized, I have no idea what to do with a whole chicken. I have never cooked one, the thought of piecing it out makes me a little squeamish and I did not want it to go to waste. Every time I opened my fridge there it was, mocking me. So yesterday I got up the nerve to do something with it. I looked up a recipe for whole roasted chicken and set to work. The only part that was really hard was that it had it's innards inside so I had to pull those out. It wasn't that bad though. I washed it thoroughly, rubbed it with some oil, salt, pepper and spices (herb de provance) and threw it in the oven on a roasting pan for 50 minutes at 450 degrees. Guess what? It turned out amazing! The skin was crispy, it had really good flavor, it was moist and it was so easy! We had some when it came out of the oven then I took the rest of the meat off of it and put it in the fridge. I made some chicken salad for sandwhiches and we had it over lettuce as a fresh salad for dinner. I also used the carcus and made chicken stock with it. I think we will get our moneys worth from it. If you have not roasted a chicken give it a try. It is easier then you think.

Good job Jacki! I have yet to actually go and make the stock with the chicken but I will do it next time.
I'm impressed. I want to try it when it cools down a little. Ill have to get your recipe.
